What this looks like in practice.
A cellar is built, not bought
Collectors rarely want a case of something excellent. They want the specific bottle that completes a vertical, which means working with wineries and other collectors rather than with a merchant.
Provenance applies to wine as well
For older bottles, storage history decides what is actually in the glass. Where a bottle has been matters as much as what is on the label.
The chef who is booked out
Award winning kitchens are reserved months ahead. Access is a relationship with the kitchen, not a reservation system.

Can you book a restaurant that is fully reserved?
Frequently. The same principle as the rest of our work: public availability is not the same as availability.
Do you arrange private chefs?
Yes — including chefs whose own restaurants are booked months in advance, for a dinner at home or at a rented property.
Can you source a specific vintage?
Rare bottles are sourced through wineries and private collectors rather than retail. Whether a particular vintage can be found depends on what is still in circulation.
Is this only for events, or also day to day?
Both. A single dinner and the continuous running of a household are equally normal requests.
What does it cost?
There is no price list. A single booking and a standing arrangement are quoted differently, always before anything is committed.
